Description

A fresh, quick, and healthy garden salad with leafy greens, cherry tomatoes, cucumber, and red onion, topped with a light vinaigrette.


Ingredients

  • 1 tbsp apple cider vinegar
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp Dijon mustard

  • 1 bag of leafy greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 small red onion, thinly sliced

Instructions

  1. Mix the leafy greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  2. Prepare the dressing by whisking together apple cider vinegar, extra virgin olive oil, Dijon mustard, salt, and pepper until well blended.
  3. Combine the dressing with the salad just before serving to maintain the crispness of the greens.
