- 4 chicken thighs
- 2 cups baby potatoes
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the olive oil, garlic, Parmesan cheese, oregano, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the mixture.
- Place the chicken thighs and baby potatoes in a single layer on a baking sheet.
- Roast in the oven for about 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
For extra crispy skin, broil the chicken for a few minutes at the end of cooking. You can substitute chicken thighs with chicken breast if you prefer a leaner cut.
