Description

A delightful dessert combining rich chocolate layers with a sweet coconut-pecan frosting, perfect for celebrations.


Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut (for frosting)
  • 1 cup chopped pecans (for frosting)
  • 1 cup brown sugar (for frosting)
  • ½ cup evaporated milk (for frosting)
  • 1 stick butter (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, mix the cocoa powder, flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the buttermilk, oil, eggs, and vanilla. Mix well.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Gradually stir in the boiling water until smooth.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. For the frosting, cook the brown sugar, evaporated milk, and butter in a saucepan over medium heat until it thickens. Stir in coconut and pecans.
  9. Once the cakes are cool, frost with the coconut-pecan frosting and serve.

Notes

Make sure all ingredients are at room temperature before starting. Let cakes cool completely before frosting.
