Description

Tender, juicy chicken coated in a sweet-savory gluten-free teriyaki sauce. Perfectly flavored and served with rice or noodles.


Ingredients

  • 1 lb chicken breast or thighs, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 2 green onions, sliced
  • ¼ cup gluten-free soy sauce (tamari)
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar (gluten-free)
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • ½ cup water
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Whisk together tamari, honey, brown sugar, rice vinegar, garlic, ginger, and water. Set aside.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook 5–7 minutes until lightly browned and cooked through.
  3. Pour the teriyaki sauce over the chicken and bring to a simmer.
  4. Add the cornstarch slurry and stir until the sauce becomes thick and glossy, 1–2 minutes.
  5. Remove from heat and garnish with green onions. Serve hot over rice or gluten-free noodles.

Notes

Cut chicken evenly for perfect cooking. Adjust sweetness by adding more or less honey. If sauce gets too thick, add a splash of water. Add steamed broccoli for extra volume.
