Description

These stuffed mini peppers are quick and delicious, filled with creamy goat cheese and perfect for appetizers or snacks.


Ingredients

  • 12 Mini bell peppers
  • 8 oz Goat cheese
  • 2 tbsp Balsamic glaze
  • 1 tbsp Honey
  • 1 tbsp Fresh thyme
  • 1 tbsp Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the mini peppers in half lengthwise and remove seeds.
  3. Mix goat cheese with honey, thyme, salt, and pepper in a bowl.
  4. Stuff the pepper halves with the cheese mixture.
  5. Drizzle with olive oil and balsamic glaze.
  6. Place stuffed peppers on a baking sheet and roast for 15-20 minutes until soft.
  7. Serve warm as an appetizer.
