- 2 boneless, skinless chicken breasts
- 1 cup quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, sliced
- 1/4 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 cup plain Greek yogurt
- 1 garlic clove, minced
- Juice of 1 lemon
- Fresh dill or parsley for garnish
Instructions
- Mix olive oil, oregano, salt, and pepper in a bowl. Marinate chicken breasts for at least 30 minutes.
- Grill or cook the chicken in a skillet over medium heat until cooked through, about 6-7 minutes per side. Allow to rest, then slice.
- Cook quinoa or rice according to package instructions.
- Mix Greek yogurt, minced garlic, lemon juice, and a pinch of salt in a separate bowl to create tzatziki sauce.
- Assemble the bowls: start with quinoa or rice, top with sliced chicken, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta cheese. Drizzle with tzatziki sauce and garnish with fresh dill or parsley.
