Description
A fresh, green soup made with spinach, herbs, and a light broth that’s quick to prepare and healthy.
Ingredients

- 2 tablespoons vegetable oil or butter
- 1 medium onion, chopped
- 1 large carrot, diced
- 2 medium potatoes, peeled and diced
- 4 cups fresh spinach, washed and chopped
- 1 cup fresh dill, chopped (or mix with parsley)
- 6 cups vegetable or chicken broth
- 2 cloves garlic, minced
- 2 tablespoons lemon juice or white vinegar
- Salt and black pepper to taste
- 2 hard-boiled eggs, optional, sliced for serving
- Sour cream or plain yogurt, optional for serving
Instructions
- Heat oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
- Add carrot and potatoes. Cook 3–4 minutes, stirring.
- Pour in broth and bring to a boil. Lower heat and simmer until potatoes are tender, about 10–12 minutes.
- Add garlic, chopped spinach, and dill. Cook 2–3 minutes until greens wilt.
- Stir in lemon juice or vinegar. Taste and add salt and pepper as needed.
- Turn off heat. Let the soup rest a few minutes before serving.
- Serve with sliced hard-boiled egg and a spoon of sour cream if you like.
Notes
For a creamier texture, blend part of the soup before adding greens. Use fresh dill for the best taste, but parsley works too.
