Green Borscht (Ukrainian Spinach Soup)

Description

A fresh, green soup made with spinach, herbs, and a light broth that’s quick to prepare and healthy.


Ingredients

Scale
  • 2 tablespoons vegetable oil or butter
  • 1 medium onion, chopped
  • 1 large carrot, diced
  • 2 medium potatoes, peeled and diced
  • 4 cups fresh spinach, washed and chopped
  • 1 cup fresh dill, chopped (or mix with parsley)
  • 6 cups vegetable or chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice or white vinegar
  • Salt and black pepper to taste
  • 2 hard-boiled eggs, optional, sliced for serving
  • Sour cream or plain yogurt, optional for serving

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
  2. Add carrot and potatoes. Cook 3–4 minutes, stirring.
  3. Pour in broth and bring to a boil. Lower heat and simmer until potatoes are tender, about 10–12 minutes.
  4. Add garlic, chopped spinach, and dill. Cook 2–3 minutes until greens wilt.
  5. Stir in lemon juice or vinegar. Taste and add salt and pepper as needed.
  6. Turn off heat. Let the soup rest a few minutes before serving.
  7. Serve with sliced hard-boiled egg and a spoon of sour cream if you like.

Notes

For a creamier texture, blend part of the soup before adding greens. Use fresh dill for the best taste, but parsley works too.
