Description
A quick and tasty gyro featuring grilled chicken and cool cucumber tzatziki.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 flatbreads or pita bread
- 1 cup thinly sliced cucumber
- 1/2 cup Greek yogurt
- 1/4 cup finely grated cucumber (squeezed to remove excess liquid)
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill or parsley, chopped
- 1 small clove garlic, minced
- Salt and pepper, to taste
Instructions
- Coat the chicken breasts in olive oil, garlic powder, oregano, paprika, salt, and pepper. Let marinate for 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Grill the chicken for 5-6 minutes on each side or until cooked through and nicely charred. Slice thinly.
- To prepare the tzatziki sauce, mix together the yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper in a bowl. Chill until ready to use.
- Warm the flatbreads on the grill or in a dry pan.
- Assemble the gyros by layering sliced cucumber and grilled chicken on each flatbread. Generously drizzle with the tzatziki sauce.
- Serve immediately, garnished with fresh herbs if desired.
Notes
For a variation, thinly sliced pork or lamb can be used instead of chicken. Add a dash of cayenne for heat if desired.
