Description

A quick and tasty gyro featuring grilled chicken and cool cucumber tzatziki.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 flatbreads or pita bread
  • 1 cup thinly sliced cucumber
  • 1/2 cup Greek yogurt
  • 1/4 cup finely grated cucumber (squeezed to remove excess liquid)
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or parsley, chopped
  • 1 small clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Coat the chicken breasts in olive oil, garlic powder, oregano, paprika, salt, and pepper. Let marinate for 15 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 5-6 minutes on each side or until cooked through and nicely charred. Slice thinly.
  3. To prepare the tzatziki sauce, mix together the yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper in a bowl. Chill until ready to use.
  4. Warm the flatbreads on the grill or in a dry pan.
  5. Assemble the gyros by layering sliced cucumber and grilled chicken on each flatbread. Generously drizzle with the tzatziki sauce.
  6. Serve immediately, garnished with fresh herbs if desired.

Notes

For a variation, thinly sliced pork or lamb can be used instead of chicken. Add a dash of cayenne for heat if desired.
