Description

A sweet and simple Hawaiian Pineapple Cake that bakes quickly and is perfect for any gathering.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. Combine flour, sugar, baking soda, baking powder, and salt in a large mixing bowl.
  3. Mix the crushed pineapple, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

For a tropical touch, add shredded coconut or fold in chopped macadamia nuts. Serve with whipped cream or ice cream if desired.
