Description

Moist and fruity Hawaiian Pineapple Cake Bars with coconut, perfect for snacks and gatherings.


Ingredients

  • 1 cup crushed pineapple, drained
  • 1/2 cup unsweetened shredded coconut
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Mix together the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. Combine the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed pineapple and shredded coconut.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into bars.
