Description

Delicious and nutritious cookies made with oats and healthy ingredients, perfect for any time of the day.


Ingredients

Scale
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/2 cup dates, pitted and chopped
  • 1/4 cup maple syrup or agave nectar (optional for sweetness)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Optional add-ins: nuts, seeds, or dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, almond flour, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, maple syrup (if using), vanilla extract, and chopped dates.
  4. Pour the wet mixture into the dry ingredients and stir until combined. If using, fold in any optional add-ins.
  5. Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your healthy cookies!
