Ingredients

- 1 cup oats
- 1/2 cup almond flour
- 1/2 cup dates, pitted and chopped
- 1/4 cup maple syrup or agave nectar (optional for sweetness)
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
- Optional add-ins: nuts, seeds, or dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, almond flour, baking soda, and salt.
- In another bowl, combine the melted coconut oil, maple syrup (if using), vanilla extract, and chopped dates.
- Pour the wet mixture into the dry ingredients and stir until combined. If using, fold in any optional add-ins.
- Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your healthy cookies!
