- 1/2 cup almond flour
- 2 large egg whites (at room temperature)
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract

- 1/2 cup unsalted butter (softened)
- 1 cup powdered sugar (for filling)
- 1 teaspoon vanilla extract (for filling)
- 2 tablespoons heavy cream or milk
- Pinch of salt

Instructions
- Sift the powdered sugar and almond flour into a bowl and set aside.
- Whisk egg whites on low speed, then increase to medium-high. Gradually add granulated sugar until stiff peaks form.
- Fold in the sifted almond flour and powdered sugar mixture, adding food coloring if desired.
- Transfer the macaron batter to a piping bag and pipe heart shapes on a lined baking sheet.
- Let the piped macarons sit for 30 minutes to 1 hour to form a dry skin.
- Preheat oven to 300°F (150°C). Bake macarons for 18 to 20 minutes until firm and lift off easily.
- Beat softened butter until smooth, then gradually add powdered sugar for the buttercream filling.
- Add vanilla and a pinch of salt, then stir in heavy cream or milk until smooth.
- Flip cooled macaron shells, pipe buttercream onto one shell, and sandwich with another shell.
- Chill assembled macarons in the refrigerator for at least 24 hours for the best flavor.

Ensure mixing bowl and utensils are clean and dry to properly whip egg whites. Consider making a test batch if you’re new to macarons.
