Instructions
- Sift the powdered sugar and almond flour into a bowl and set aside.
- In a clean mixing bowl, whisk the egg whites until soft peaks form. Gradually add granulated sugar and whisk until stiff peaks form.
- Fold the almond flour mixture into the egg whites, adding food coloring if desired, until the mixture flows like thick lava.
- Transfer the batter to a piping bag and pipe heart shapes onto a lined baking sheet.
- Let the piped macarons sit at room temperature for 30 minutes to 1 hour until a dry skin forms.
- Preheat the oven to 300°F (150°C) and bake the macarons for 18 to 20 minutes until firm.
- In a separate bowl, beat the softened butter until creamy, then gradually add powdered sugar, vanilla extract, and a pinch of salt.
- Add heavy cream to reach a spreadable consistency, adding food coloring if desired.
- Once the macaron shells are cooled, pipe buttercream onto the flat side of one shell and sandwich it with another shell.
- Refrigerate the assembled macarons for at least 24 hours before serving.
