- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Marinara sauce for serving
Instructions
- In a bowl, mix the flour and salt. Create a well in the center and add the eggs. Gradually combine everything to form a dough. Knead for about 5-10 minutes until the dough is smooth. Wrap it in plastic wrap and let it rest for 30 minutes.
- Meanwhile, in another bowl, mix the ricotta, Parmesan, basil, salt, and pepper. Set this mixture aside.
- Roll out the rested dough thinly on a floured surface. Use a heart-shaped cutter to cut out shapes.
- Place a small spoonful of the cheese mixture on half of the heart shapes. Top with another heart shape and seal the edges by pressing them together.
- Bring a pot of water to a boil. Carefully drop the ravioli in and cook for about 4 minutes or until they float to the top.
- Drain the ravioli and serve warm with marinara sauce.
Notes
Ensure the dough is thin enough for the best texture. Use flour on the work surface to prevent sticking.
