- 2 sea bass fillets (6–8 oz each)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill or thyme, chopped
- Zest of 1 lemon
- Juice of ½ lemon
- Salt and black pepper to taste
- Lemon slices for topping
Instructions
- Preheat oven to 400°F (200°C).
- Pat sea bass dry and place on a baking sheet lined with parchment.
- In a small bowl, mix olive oil, garlic, parsley, dill or thyme, lemon zest, lemon juice, salt, and pepper.
- Brush the mixture generously over the fillets.
- Top with thin lemon slices.
- Bake for 12–15 minutes, depending on thickness, until the fish is opaque and flakes easily with a fork.
- Serve immediately with vegetables, rice, or a fresh salad.
Notes
Don’t overcook; remove as soon as the fish flakes. Add a drizzle of olive oil after baking for shine. Using fresh herbs gives the brightest flavor.
