Soft brioche bread with a rich, buttery flavor and fluffy texture, perfect for breakfast or sandwiches.

- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1 tsp salt
- 1/2 cup whole milk (warmed to about 110°F)
- 4 large eggs (room temperature)
- 1/2 cup unsalted butter (softened and cut into chunks)
- 1 egg (for egg wash)
- 1 tbsp milk (for egg wash)
Instructions
- Activate the yeast: In a small bowl, combine warm milk and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes foamy.
- Mix the dough: In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and eggs. Stir until combined.
- Knead the dough: Turn the dough out onto a floured surface. Add softened butter a little at a time, kneading until the dough is smooth and elastic, about 8-10 minutes.
- First rise: Place the dough in a lightly greased bowl, cover with plastic wrap or a damp towel, and let it rise in a warm place until doubled in size, about 1-2 hours.
- Shape the loaf: Once risen, punch down the dough and turn it out onto a floured surface. Shape it into a loaf and place it into a greased loaf pan.
- Egg wash & bake: In a small bowl, whisk together 1 egg and 1 tablespoon of milk. Brush this mixture over the top of the loaf. Bake in a preheated oven at 350°F for 30-35 minutes or until golden brown.
- Cool & serve: Remove from the oven and let it cool in the pan for a few minutes. Then transfer to a wire rack to cool completely before slicing.
Notes
Store your brioche bread in a cool, dry place wrapped in plastic wrap or in an airtight container. For longer storage, slices can be frozen.
