- 1 cup (226g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ¾ cup (150g) packed brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 ½ cups (310g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup (130g) shelled pistachios, roughly chopped
- Flaky sea salt, for topping
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently stir in the chopped pistachios.
- Scoop out dough balls and place them on the prepared baking sheets, leaving 2 inches between each cookie.
- Sprinkle a pinch of flaky sea salt on top of each cookie.
- Bake for 10-12 minutes, until edges are lightly golden.
- Let the cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For chewier cookies, chill the dough for 30 minutes before baking. Adjust flaky sea salt based on taste preference.
