- 1 cup vegetable oil
- 2 cups sugar
- 5 large eggs
- 2 cups all-purpose flour
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 package (8 ounces) cream cheese
- 1/2 cup unsalted butter (for frosting)
- 4 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a mixing bowl, cream together the butter, oil, and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour and buttermilk, then add to the creamed mixture alternately with the flour.
- Stir in the vanilla, coconut, and pecans.
- Divide the batter among the prepared pans.
- Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
- For the frosting, beat the cream cheese and butter until smooth.
- Gradually add the powdered sugar and mix until creamy.
- Frost the cooled cakes and enjoy!
Notes
Make sure all ingredients are at room temperature before mixing for better combination. Toast pecans for stronger flavor.
