Deliciously rich and chocolatey brownies infused with coconut and nuts that fit a low-carb, keto diet.

- 1 recipe ultimate keto brownies (omit the chocolate chips)
- 3/4 cup heavy whipping cream (for filling)
- 1/3 cup allulose sweetener
- 1/4 tsp glucomannan (or xanthan gum)
- 1 3/4 cup finely shredded coconut
- 1/2 tsp coconut extract (or vanilla extract)
- 1/2 cup heavy whipping cream (for topping)
- 3 ounces unsweetened chocolate (chopped)
- 2 tbsp Swerve Confectioners
- 1 tbsp allulose sweetener
- 1/4 tsp vanilla extract
Instructions
- Make the ultimate keto brownies according to that recipe, but leave out any chocolate chips.
- Pour batter into your pan and bake as directed.
- Cool the baked brownies until warm, not hot.
- In a bowl, combine 3/4 cup heavy whipping cream, 1/3 cup allulose, 1/4 tsp glucomannan, and 1/2 tsp coconut extract. Whisk until slightly thick.
- Fold in 1 3/4 cup finely shredded coconut. Mix well.
- Spread the coconut mixture evenly over the cooled brownie layer.
- Chill the pan for 20–30 minutes so the filling firms.
- Heat 1/2 cup heavy whipping cream until hot but not boiling. Pour over 3 ounces chopped unsweetened chocolate. Let sit 1 minute.
- Stir until smooth. Add 2 tbsp Swerve Confectioners, 1 tbsp allulose, and 1/4 tsp vanilla extract. Stir to combine.
- Pour the chocolate over the chilled coconut layer and spread evenly.
- Chill until the chocolate sets, about 30–60 minutes. Cut into bars.
Notes
For best results, cool brownies before adding the filling to avoid melting, and use a warm knife to cut clean squares.
