Deliciously rich and chocolatey brownies infused with coconut and nuts that fit a low-carb, keto diet.


Ingredients

  • 1 recipe ultimate keto brownies (omit the chocolate chips)
  • 3/4 cup heavy whipping cream (for filling)
  • 1/3 cup allulose sweetener
  • 1/4 tsp glucomannan (or xanthan gum)
  • 1 3/4 cup finely shredded coconut
  • 1/2 tsp coconut extract (or vanilla extract)
  • 1/2 cup heavy whipping cream (for topping)
  • 3 ounces unsweetened chocolate (chopped)
  • 2 tbsp Swerve Confectioners
  • 1 tbsp allulose sweetener
  • 1/4 tsp vanilla extract

Instructions

  1. Make the ultimate keto brownies according to that recipe, but leave out any chocolate chips.
  2. Pour batter into your pan and bake as directed.
  3. Cool the baked brownies until warm, not hot.
  4. In a bowl, combine 3/4 cup heavy whipping cream, 1/3 cup allulose, 1/4 tsp glucomannan, and 1/2 tsp coconut extract. Whisk until slightly thick.
  5. Fold in 1 3/4 cup finely shredded coconut. Mix well.
  6. Spread the coconut mixture evenly over the cooled brownie layer.
  7. Chill the pan for 20–30 minutes so the filling firms.
  8. Heat 1/2 cup heavy whipping cream until hot but not boiling. Pour over 3 ounces chopped unsweetened chocolate. Let sit 1 minute.
  9. Stir until smooth. Add 2 tbsp Swerve Confectioners, 1 tbsp allulose, and 1/4 tsp vanilla extract. Stir to combine.
  10. Pour the chocolate over the chilled coconut layer and spread evenly.
  11. Chill until the chocolate sets, about 30–60 minutes. Cut into bars.

Notes

For best results, cool brownies before adding the filling to avoid melting, and use a warm knife to cut clean squares.
