Description

Crispy, low-carb broccoli fries that are gluten-free and perfect for snacks or sides.


Ingredients

  • 12 oz bag of broccoli
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 eggs
  • 1 tbsp ranch seasoning (or seasoning of choice)
  • Salt and pepper, to taste
  • Garlic powder, for extra flavor
  • Crushed red pepper flakes, for a spicy kick
  • Fresh herbs like parsley or chives, for garnish
  • 1/4 cup almond flour, for extra crunch

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Steam the broccoli until tender, then finely chop it.
  3. Using a cheesecloth, squeeze out as much moisture from the chopped broccoli as possible.
  4. In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, eggs, ranch seasoning, salt, and pepper.
  5. Line a baking sheet with parchment paper.
  6. Form the broccoli mixture into small fry shapes and place them on the prepared baking sheet.
  7. Bake in the preheated oven for 20 minutes, turning halfway through, until the fries are golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.

Notes

Serve warm with ranch, sugar-free ketchup, or yogurt dip. Store in an airtight container for up to 3 days.
