Ingredients

- 2 cups broccoli florets
- 1 cup chicken or vegetable broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onions and garlic, sautéing until soft.
- Include broccoli and broth, bringing to a boil.
- Reduce heat and simmer until broccoli is tender.
- Blend the soup until smooth.
- Stir in heavy cream and cheddar cheese, heating until cheese melts.
- Season with salt and pepper to taste. Serve hot.
Notes
For extra flavor, add cooked bacon pieces or swap cheddar for Monterey Jack or Gruyère. A hand blender can be used for easier clean-up.
