Description

A creamy and comforting Keto Broccoli Soup, perfect for cold days, low in carbs, and quick to make.


Ingredients

  • 2 cups broccoli florets
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and garlic, sautéing until soft.
  3. Include broccoli and broth, bringing to a boil.
  4. Reduce heat and simmer until broccoli is tender.
  5. Blend the soup until smooth.
  6. Stir in heavy cream and cheddar cheese, heating until cheese melts.

Notes
