Description

Spicy and crunchy taquitos made with rotisserie chicken and cheese, perfect for a low-carb diet.


Ingredients

  • 4 low-carb tortillas
  • 1.5 cups shredded rotisserie chicken
  • 1/4 cup Buffalo sauce
  • 1/4 cup ranch dressing
  • 1/4 cup shredded cheddar cheese
  • 4 oz cream cheese
  • Oil for frying

Instructions

  1. Preheat the oven to 350°F.
  2. Mix shredded rotisserie chicken, cream cheese, Buffalo sauce, ranch dressing, and shredded cheddar in a baking dish until well combined.
  3. Bake for about 20 minutes until warm and the cheeses are slightly melted.
  4. Spoon the filling onto low-carb tortillas and roll them tightly into taquitos.
  5. Heat oil in a skillet over medium-high heat and fry the taquitos until golden brown and crispy.
  6. Remove from oil and drain on paper towels. Let them cool slightly before serving.

Notes

Warm tortillas slightly to prevent cracking. Fry in small batches for even crispness.
