- 4 low-carb tortillas
- 1.5 cups shredded rotisserie chicken
- 1/4 cup Buffalo sauce
- 1/4 cup ranch dressing
- 1/4 cup shredded cheddar cheese
- 4 oz cream cheese
- Oil for frying
Instructions
- Preheat the oven to 350°F.
- Mix shredded rotisserie chicken, cream cheese, Buffalo sauce, ranch dressing, and shredded cheddar in a baking dish until well combined.
- Bake for about 20 minutes until warm and the cheeses are slightly melted.
- Spoon the filling onto low-carb tortillas and roll them tightly into taquitos.
- Heat oil in a skillet over medium-high heat and fry the taquitos until golden brown and crispy.
- Remove from oil and drain on paper towels. Let them cool slightly before serving.
Notes
Warm tortillas slightly to prevent cracking. Fry in small batches for even crispness.
