- 2 chicken breasts
- 2 medium zucchinis (spiralized into noodles)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 garlic cloves (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Melt the butter in a large skillet over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the chicken breasts to the skillet, season with salt and pepper, and cook for about 5-7 minutes on each side, or until fully cooked. Remove chicken from the skillet and let it rest.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and mix until the sauce is creamy and smooth.
- Add the spiralized zucchini noodles to the skillet and toss to coat in the Alfredo sauce. Cook for 2-3 minutes until the zoodles are tender.
- Slice the chicken and serve it on top of the zoodles, garnished with fresh parsley.
Notes
Do not overcook zoodles; cook 2-3 minutes until just tender. Use fresh Parmesan for a better taste and a smoother sauce.
