Description

Enjoy crispy, low-carb fries made with almond flour for a keto-friendly option.


Ingredients

Scale
  • 100 g almond flour (1/2 cup + 1/3 cup)
  • 1 tablespoon xanthan gum
  • 1/2 teaspoon salt
  • 6 tablespoons hot water
  • 20 drops mashed potato flavor drops (optional)
  • Olive oil for frying

Instructions

  1. In a small bowl, whisk together almond flour, xanthan gum, and salt.
  2. Mix in hot water and flavor extract if using. Knead together with hands until combined.
  3. Place dough in between two sheets of parchment paper and roll out to a 1/4 inch thick using a rolling pin.
  4. Slice dough into small strips, aiming for 1/8 to 1/4 inch thickness.
  5. Lay strips on a parchment lined baking tray and freeze.
  6. Once frozen, store fries in a freezer-safe bag.
  7. To fry: Heat enough olive oil in a skillet over medium heat. Cook a single layer of fries until golden brown on all sides.
  8. To bake: Spread fries on a baking tray, spray with olive oil, and bake at 400°F for 10 to 12 minutes.
  9. To air fry: Spread fries in a single layer in air fryer, spray with olive oil, and air fry at 400°F for 6 minutes.

Notes

For best results, roll the dough thin for crisp fries and do not overcrowd the cooking surface.
