- 1 lb ground meat (beef or chicken)
- 1 cup Monterey Jack cheese
- 4 oz cream cheese
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup almond flour (for binding, optional)
- 2 tbsp olive oil (for cooking)
Instructions
- Preheat your oven to 375°F (190°C).
- Add olive oil to a skillet over medium heat, then sauté chopped onions and bell peppers until soft.
- Cook ground meat in the skillet until browned, seasoning with garlic powder, salt, and pepper.
- Mix in cream cheese and Monterey Jack cheese until melted and combined.
- If using almond flour, mix it in to help bind the mixture.
- Roll the meat and cheese mixture in lettuce leaves or low-carb tortillas.
- Place the roll-ups in a baking dish and sprinkle additional cheese on top if desired.
- Bake for 15-20 minutes until heated through and cheese is bubbly.
- Serve hot and enjoy!
Notes
Cook vegetables until soft to avoid a watery filling, and warm the cream cheese for better mixing. Use sturdy lettuce leaves if rolling instead of tortillas.
