Ingredients

  • 1 lb ground meat (beef or chicken)
  • 1 cup Monterey Jack cheese
  • 4 oz cream cheese
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup almond flour (for binding, optional)
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add olive oil to a skillet over medium heat, then sauté chopped onions and bell peppers until soft.
  3. Cook ground meat in the skillet until browned, seasoning with garlic powder, salt, and pepper.
  4. Mix in cream cheese and Monterey Jack cheese until melted and combined.
  5. If using almond flour, mix it in to help bind the mixture.
  6. Roll the meat and cheese mixture in lettuce leaves or low-carb tortillas.
  7. Place the roll-ups in a baking dish and sprinkle additional cheese on top if desired.
  8. Bake for 15-20 minutes until heated through and cheese is bubbly.
