A quick and low-carb no-bake dessert featuring creamy cheesecake with strawberries.
Ingredients

- 8 ounces cream cheese, softened
- 1/2 cup unsweetened stevia or erythritol
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh strawberries, pureed
- 1/2 cup fresh strawberries, chopped for topping
- Crushed almonds or pecans for crust (optional)
- Butter for crust (optional)
Instructions
- Beat the softened cream cheese with the sweetener and vanilla extract until smooth.
- Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Add the pureed strawberries and mix until well combined.
- Prepare the crust by mixing crushed almonds or pecans with melted butter, then press into the bottom of serving cups if using.
- Spoon the cheesecake mixture into the prepared cups.
- Top with chopped strawberries.
- Refrigerate for at least 120 minutes before serving.
Notes
Use room temperature cream cheese for a smooth mix. Chill for best texture.
