Quick and low-carb Keto Zucchini Fritters that are crispy on the outside and soft on the inside, perfect as a snack or side dish.
Ingredients

- 2 medium zucchinis, grated
- 1/2 cup almond flour
- 1/4 cup grated parmesan cheese
- 2 large eggs
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Oil for frying
Instructions
- Grate the zucchinis and press out extra water with a clean cloth.
- Mix the grated zucchini with almond flour, parmesan, eggs, minced garlic, salt, pepper, and Italian seasoning until the mix holds together.
- Heat oil in a skillet over medium heat.
- Scoop spoonfuls of the mixture and flatten them in the hot skillet.
- Fry each side for 3–4 minutes until golden brown. Do not crowd the pan.
- Drain the cooked fritters on paper towels and serve warm.
Notes
Serve warm with sour cream, yogurt, or garlic mayo. These fritters can be customized with herbs or spices to taste.
