- 1 cup granulated sugar
- 1 large egg

- 1/4 cup powdered sugar, for rolling
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the egg, lemon juice, and lemon zest.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Roll the dough into balls, then roll them in powdered sugar until coated.
- Place the balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
To keep the cookies fresh, store in an airtight container at room temperature for about a week. Freeze for longer storage.
