- 475g bread flour
- 260g whole milk
- 1 large egg
- 1 egg yolk
- 50g granulated sugar
- 1/8 tsp cardamom (optional)
- 9g salt
- 6g instant yeast
- 90g unsalted butter (chilled)
- Zest of 1–2 lemons
- 90g softened unsalted butter
- 80g granulated sugar
- 25g freeze-dried raspberries (crushed into powder form)
Instructions
- In a bowl, mix together the bread flour, yeast, sugar, cardamom (if using), and salt.
- In another bowl, combine the milk, large egg, and egg yolk.
- Pour the wet ingredients into the dry and knead until combined.
- Gradually add the chilled unsalted butter until fully incorporated and the dough is smooth.
- Allow the dough to rise until doubled in size.
- Prepare the raspberry filling by creaming the softened butter with sugar, then mixing in the lemon zest and crushed freeze-dried raspberries.
- Roll out the brioche dough, spread the filling, and shape the buns.
- Let the shaped buns rise again until puffy.
- Bake in a preheated oven until golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm or at room temperature, optionally with powdered sugar or lemon glaze. Pairs well with coffee or tea.
