Description

A delightful, light, and refreshing dessert with a lovely pink hue, perfect for any occasion.


Ingredients

  • 1 package (3 oz) strawberry gelatin powder
  • 1 cup boiling water
  • 1 cup cottage cheese
  • 1 cup nondairy dessert topping (like Cool Whip, thawed)
  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup fresh strawberries, washed, dried, and sliced
  • Optional: 1 cup mini marshmallows or 1/2 cup chopped nuts (sliced almonds, walnuts, or pecans)

Instructions

  1. Dissolve the strawberry Jell-O in boiling water until completely dissolved. Set aside to cool.
  2. In a blender, pulse the cottage cheese until smooth.
  3. Transfer the smooth cottage cheese into the bowl with the cooled gelatin mixture.
  4. Gently fold in the Cool Whip until well combined.
  5. Add the drained crushed pineapple and sliced strawberries, stirring gently.
  6. If desired, fold in mini marshmallows or chopped nuts.
  7. Transfer the mixture to a serving dish and refrigerate for at least 2 hours until set.
  8. Garnish with additional sliced strawberries, Cool Whip, or nuts before serving.
