- 1 package (3 oz) strawberry gelatin powder
- 1 cup boiling water
- 1 cup cottage cheese
- 1 cup nondairy dessert topping (like Cool Whip, thawed)
- 1 can (8 oz) crushed pineapple, drained
- 1 cup fresh strawberries, washed, dried, and sliced
- Optional: 1 cup mini marshmallows or 1/2 cup chopped nuts (sliced almonds, walnuts, or pecans)
Instructions
- Dissolve the strawberry Jell-O in boiling water until completely dissolved. Set aside to cool.
- In a blender, pulse the cottage cheese until smooth.
- Transfer the smooth cottage cheese into the bowl with the cooled gelatin mixture.
- Gently fold in the Cool Whip until well combined.
- Add the drained crushed pineapple and sliced strawberries, stirring gently.
- If desired, fold in mini marshmallows or chopped nuts.
- Transfer the mixture to a serving dish and refrigerate for at least 2 hours until set.
- Garnish with additional sliced strawberries, Cool Whip, or nuts before serving.
Notes
