Description

A simple and filling low-carb meal featuring ground chicken and cauliflower rice.


Ingredients

  • 1 lb ground chicken
  • 2 cups cauliflower rice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup diced avocado
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the ground chicken and spices. Stir and break the meat until it browns.
  3. Add the cauliflower rice and cook until soft.
  4. Turn off the heat. Put the chicken mix in bowls.
  5. Add tomatoes, lettuce, avocado, and cilantro.
  6. Finish with lime wedges. Serve right away.

Notes

For a full low-carb meal, you can add a small side like keto pecan butter tarts. Store cooked mix in an airtight container in the fridge for up to 3 days.
