Ingredients

- 1 lb ground chicken
- 2 cups cauliflower rice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup diced avocado
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the ground chicken and spices. Stir and break the meat until it browns.
- Add the cauliflower rice and cook until soft.
- Turn off the heat. Put the chicken mix in bowls.
- Add tomatoes, lettuce, avocado, and cilantro.
- Finish with lime wedges. Serve right away.
Notes
For a full low-carb meal, you can add a small side like keto pecan butter tarts. Store cooked mix in an airtight container in the fridge for up to 3 days.
