A fresh and colorful salad with ripe mango and creamy avocado, perfect for hot days and quick meals.
Ingredients
- Mango
- Avocado
- Red capsicum peppers
- Red onions
- Cucumber
- Coriander/cilantro
- Lime
- Salt to taste
- Red chilli flakes
- Olive oil
Instructions
- Cut the mango, avocado, red capsicum peppers, red onions, and cucumber into small cubes.
- In a large bowl, combine all the chopped ingredients.
- Add chopped coriander/cilantro.
- Squeeze lime juice over the mixture.
- Drizzle olive oil and sprinkle salt and red chilli flakes to taste.
- Toss gently to combine all ingredients.
- Serve chilled.
Notes
Store the salad in an airtight container in the fridge and eat within 1 day for best texture and color. To slow browning of avocado, press a piece of plastic wrap on the surface or add a little extra lime juice.
