A small, sweet bite that mixes cream cheese, apples, and caramel, perfect for parties or a quick treat.

- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- 16 oz cream cheese, softened
- ½ cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup diced apples (Granny Smith or your choice)
- ½ cup caramel sauce
- ½ cup brown sugar
- 2 tbsp butter
- 1 tsp cinnamon
- Whipped cream
Instructions
- Mix graham cracker crumbs and melted butter until the crumbs are wet.
- Press the mix into lined mini muffin cups to form small crusts.
- Set aside.
- Beat softened cream cheese until smooth.
- Add sugar and vanilla and mix.
- Add eggs one at a time and mix until the batter is smooth.
- Spoon cheese batter over each crust, filling most of each cup but leaving room on top.
- Cook diced apples with brown sugar, butter, and cinnamon in a skillet until soft and glossy.
- Let apples cool a little before adding to cheesecake cups.
- Spoon a little of the cooked apples onto each filled cup.
- Bake in a preheated oven until edges set but centers still jiggle slightly.
- Remove and cool on a rack.
- Chill the bites for a few hours so they firm up.
- Drizzle caramel sauce over each bite before serving.
Notes
Use room temperature cream cheese for a smooth batter. Cool completely before chilling to avoid extra condensation.
