  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus an additional ½ cup for topping)
  • 2 cups mixed vegetables (optional but recommended)
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers (like Ritz)
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cooked chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, mixed vegetables (if using), chopped onion, salt, and pepper until fully combined.
  3. Transfer the chicken mixture to a greased casserole dish.
  4. In a separate bowl, combine the crushed crackers with the melted butter, and mix well.
  5. Sprinkle the buttery cracker mixture evenly over the chicken mixture in the casserole dish.
  6. Top with the remaining ½ cup of shredded cheddar cheese.
