- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus an additional ½ cup for topping)
- 2 cups mixed vegetables (optional but recommended)
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 cup crushed buttery crackers (like Ritz)
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cooked chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, mixed vegetables (if using), chopped onion, salt, and pepper until fully combined.
- Transfer the chicken mixture to a greased casserole dish.
- In a separate bowl, combine the crushed crackers with the melted butter, and mix well.
- Sprinkle the buttery cracker mixture evenly over the chicken mixture in the casserole dish.
- Top with the remaining ½ cup of shredded cheddar cheese.
- Bake in the preheated oven for about 30-35 minutes or until the casserole is hot and bubbly.
Notes
For added flavor, consider using different types of cheese, such as mozzarella or pepper jack. If you prefer a crunchier topping, bake the casserole uncovered for the last 10-15 minutes.
