Ingredients

- 2 cups crushed graham crackers (or almond flour for Keto)
- 1/2 cup melted butter
- 1 cup cream cheese, softened
- 1/2 cup powdered erythritol (or sweetener of choice)
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup fresh strawberries, pureed
- 2 tablespoons gelatin (optional, for firmness)
Instructions
- Mix crushed graham crackers and melted butter in a bowl.
- Press into the bottom of a lined baking dish.
- Beat softened cream cheese, powdered erythritol, and vanilla until smooth.
- Whip heavy cream in a separate bowl until stiff peaks form, then fold into the cream cheese mixture.
- Spread the cream cheese mixture over the crust.
- Swirl in the strawberry puree on top.
- Dissolve gelatin in warm water and stir it into the mixture, if desired.
- Refrigerate for at least 240 minutes or until set.
- Cut into bars and serve.
Notes
Chill for at least 4 hours or overnight for best results. Use a sharp knife warmed in hot water for clean slices.
