Description

Quick and easy no-bake dessert bars with a crunchy crust and smooth strawberry cream layer.


Ingredients

  • 2 cups crushed graham crackers (or almond flour for Keto)
  • 1/2 cup melted butter
  • 1 cup cream cheese, softened
  • 1/2 cup powdered erythritol (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh strawberries, pureed
  • 2 tablespoons gelatin (optional, for firmness)

Instructions

  1. Mix crushed graham crackers and melted butter in a bowl.
  2. Press into the bottom of a lined baking dish.
  3. Beat softened cream cheese, powdered erythritol, and vanilla until smooth.
  4. Whip heavy cream in a separate bowl until stiff peaks form, then fold into the cream cheese mixture.
  5. Spread the cream cheese mixture over the crust.
  6. Swirl in the strawberry puree on top.
  7. Dissolve gelatin in warm water and stir it into the mixture, if desired.
  8. Refrigerate for at least 240 minutes or until set.
  9. Cut into bars and serve.

Notes

Chill for at least 4 hours or overnight for best results. Use a sharp knife warmed in hot water for clean slices.
