- 1 cup creamy peanut butter
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups crispy rice cereal (like Rice Krispies)
- 12 oz milk chocolate chips (or semi-sweet)
- 2 tablespoons vegetable oil
- ½ cup unsalted butter, softened (for filling)
- ¾ cup creamy peanut butter (for filling)
- 1 ½ cups powdered sugar (for filling)
- 1 teaspoon vanilla extract (for filling)
- 1–2 tablespoons milk (as needed, for filling)
Instructions
- Line a baking sheet with parchment.
- In a bowl, melt chocolate chips with vegetable oil until smooth.
- In another bowl, mix peanut butter, softened butter, powdered sugar, and vanilla, then fold in the crispy cereal gently.
- Scoop small portions and press into thin discs (cookie/wafers). Freeze for 10 minutes to firm up.
- Dip each disc halfway or fully in melted chocolate and let set on the baking sheet.
- For the filling, beat butter and peanut butter until creamy. Add powdered sugar and vanilla, whipping until fluffy. Add milk only if needed for smoothness.
- Spread filling on one wafer and top with a second wafer to form a sandwich.
- Chill 10–15 minutes for the creme to firm before serving.
Notes
Chilling the wafers makes them easier to coat in chocolate. Use creamy peanut butter only, natural peanut butter changes texture. For thicker pies, increase filling by 25%. Store in the fridge for best texture.
