- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cherry tomatoes
- 1 cup fresh spinach
- Fresh basil for garnish
Instructions
- In a large bowl, combine the balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
- Add the chicken breasts to the bowl and marinate for at least 30 minutes.
- Heat a large skillet over medium heat. Add the marinated chicken to the pan and cook for about 6-7 minutes on each side until fully cooked.
- Add the cherry tomatoes to the pan and cook until they start to burst.
- Stir in the fresh spinach and cook until wilted.
- Garnish the dish with fresh basil before serving.
Notes
For extra flavor, let the chicken marinate longer. Don’t skip the fresh basil for aroma and taste.
