- 1 ½ Cups Warm Water
- 1 ½ Cups Whole Wheat Flour
- 2 ½ Cups Bread Flour
- 1 ½ Tablespoon Dry Yeast
- ¼ Cup Brown Sugar
- 3 Tablespoons Molasses
- ¼ Cup Honey
- 3 Tablespoons Cocoa Powder
- 1 Teaspoon Kosher Salt
- ¼ Cup Canola Oil
- 2 Tablespoons Cornmeal (for dusting)
Instructions
- Add brown sugar to the warm water.
- Add yeast to the mixture and let it rise for a few minutes.
- Add molasses to the yeast mixture.
- Pour honey into the mix.
- In a separate bowl, combine bread flour and whole wheat flour.
- Add cocoa powder to the flour mix.
- Top off with salt.
- Add olive oil to the bowl.
- Mix the ingredients gently and knead.
- Allow the dough to rise for at least one hour.
- Divide the dough into two equal portions.
- Dust the baking tray with cornmeal.
- Shape the dough into logs and place them on the tray.
- Bake until golden brown and serve warm.
Notes
For best results, use warm water (about 105–115°F) to activate yeast. The dough should remain slightly tacky while kneading.
