- 2 fillets of fish (e.g., salmon, tilapia)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 tablespoons butter
- 2 cloves garlic, minced
- 8–10 shrimp, peeled and deveined
- 1 cup mashed potatoes
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season the fish fillets with salt and pepper.
- Place the fish in the skillet and cook for about 4-5 minutes on each side, or until cooked through.
- In another pan, melt butter over medium heat. Add minced garlic and sauté for 1 minute.
- Add shrimp to the butter and cook until pink and opaque, about 3-4 minutes.
- Serve the pan-seared fish topped with garlic butter shrimp next to a serving of mashed potatoes. Garnish with fresh parsley.
Notes
Pat fish dry before seasoning for a better sear. Use medium heat to avoid burning the fish. Warm mashed potatoes before serving. Add a splash of lemon juice for extra flavor.
