Description

Delicious pecan pie bars that offer the same rich, nutty flavor as traditional pecan pie in a convenient bar form.


Ingredients

  • 1¾ cups all-purpose flour
  • ½ cup sugar
  • ¾ cup cold butter
  • ⅔ cup firmly packed brown sugar
  • ⅓ cup + 1 tablespoon flour
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • ½ teaspoon salt
  • 1½ cups dark corn syrup
  • 2 cups roughly chopped pecans

Instructions

  1. Lightly grease a 9×13-inch baking pan and line it with parchment paper.
  2. Preheat the oven to 350°F (325°F for glass bakeware).
  3. Mix 1¾ cups flour with ½ cup sugar and rub in cold butter until it resembles coarse crumbs.
  4. Press this mixture firmly into the bottom of the prepared pan.
  5. Bake the crust for 20 minutes until the edges start to brown.
  6. In a bowl, combine ⅔ cup brown sugar and ⅓ cup plus 1 tablespoon flour. Whisk in the eggs, vanilla, salt, and corn syrup until smooth.
  7. Let the mixture rest for about 15 minutes.
  8. Fold in the chopped pecans and pour evenly over the hot crust.
  9. Return to the oven and bake for 40–50 minutes until the filling is set but slightly wobbles in the center.
  10. Let cool to room temperature, then refrigerate for several hours to set.
  11. Lift the bars out using the parchment paper and cut into smaller bars.

Notes

For easier cutting, use a sharp serrated knife and saw gently through the bars.
