- 1 cup crushed pineapple, drained
- 1 box yellow cake mix
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup shredded coconut
- 1 cup chopped pecans or walnuts
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the cake mix, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- Fold in crushed pineapple, shredded coconut, and chopped nuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely.
- In a small bowl, mix powdered sugar and milk to make the frosting, then spread it on top of the cooled cake.
- Slice and enjoy your delicious pineapple heaven cake!
Notes
Serve with vanilla ice cream or whipped cream. Can be garnished with additional coconut or nuts.
