Description

A delightful and simple dessert with a burst of pineapple flavor, combined with richness of coconut and crunch of nuts.


Ingredients

  • 1 cup crushed pineapple, drained
  • 1 box yellow cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the cake mix, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  3. Fold in crushed pineapple, shredded coconut, and chopped nuts.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool completely.
  7. In a small bowl, mix powdered sugar and milk to make the frosting, then spread it on top of the cooled cake.
