Ingredients

- 2 medium cucumbers, sliced
- 2 medium carrots, shredded
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 2 teaspoons sesame seeds
- Salt and pepper to taste
Instructions
- Wash and dry the cucumbers and carrots. Slice the cucumbers into thin rounds and shred the carrots. Put them in a bowl.
- Mix sesame oil, rice vinegar, and honey in a small bowl until honey dissolves. Add a pinch of salt and a little pepper.
- Pour the dressing over the vegetables and toss well to coat.
- Sprinkle the toasted sesame seeds on top and adjust seasoning if needed.
- Serve the salad cold or at room temperature.
Notes
Use fresh, firm cucumbers for the best texture. For added flavor, toast the sesame seeds before use.
