Description

A fresh and light salad that combines crisp cucumbers, vibrant carrots, and a quick sesame dressing, perfect as a side dish.


Ingredients

  • 2 medium cucumbers, sliced
  • 2 medium carrots, shredded
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 2 teaspoons sesame seeds
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cucumbers and carrots. Slice the cucumbers into thin rounds and shred the carrots. Put them in a bowl.
  2. Mix sesame oil, rice vinegar, and honey in a small bowl until honey dissolves. Add a pinch of salt and a little pepper.
  3. Pour the dressing over the vegetables and toss well to coat.
  4. Sprinkle the toasted sesame seeds on top and adjust seasoning if needed.
  5. Serve the salad cold or at room temperature.

Notes

Use fresh, firm cucumbers for the best texture. For added flavor, toast the sesame seeds before use.
