These rich and creamy Red Velvet Cheesecake Brownies combine the classic flavor of red velvet cake with a smooth cheesecake layer, making them perfect for special occasions or cozy nights at home.

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1 tablespoon cocoa powder
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the melted butter and 1 cup of sugar. Beat in the 2 eggs and 1 teaspoon of vanilla extract. Add the red food coloring, cocoa powder, flour, and salt, mixing until smooth.
- In another bowl, beat the softened cream cheese with 1/4 cup of sugar, 1 egg, and 1/2 teaspoon of vanilla extract until creamy and smooth.
- Pour half of the brownie batter into a greased baking pan. Spread the cheesecake layer over the brownie batter, then top with the remaining brownie batter. Use a knife to swirl the layers for a marbled effect.
- Place the pan in the oven and bake for about 30-35 minutes until edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool in the pan for about 30 minutes, then transfer to a wire rack to cool completely. Cut into squares to serve.
Notes
Serve warm or at room temperature, topped with whipped cream or powdered sugar for an extra treat.
