Description

Delightful and simple roasted potatoes with a crispy exterior and soft interior, perfect as a side dish.


Ingredients

  • 6 large potatoes (Idaho, Maris Pipers)
  • 12 quarts water
  • 1/2 tbsp salt
  • 1/4 cup olive oil
  • 1 tsp kosher salt
  • 1/8 tsp freshly ground pepper
  • 1 1/2 tsp caraway seeds
  • 1/2 tsp paprika (optional)
  • 1/2 tsp dry rosemary (1 tbsp fresh if using, optional)
  • 1/2 tbsp salt – to season water

Instructions

  1. Wash and peel the potatoes, then cut them into thick slices or quarters.
  2. Bring 1-2 quarts of water to a boil in a large pot and add 1/2 tbsp of salt.
  3. Add the potatoes to the boiling water and cook for about 10 minutes, until slightly tender.
  4. Drain the potatoes and let them cool for a few minutes.
  5. In a large mixing bowl, combine olive oil, kosher salt, freshly ground pepper, caraway seeds, paprika, and dry rosemary.
  6. Add the partially cooked potatoes and toss until evenly coated.
  7. Preheat your oven to 425°F (220°C).
  8. Spread the marinated potatoes on a baking sheet in a single layer.
  9. Roast in the oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.

Notes

For extra flavor, let the potatoes marinate for a longer time. Ensure they are spread out evenly on the baking sheet for maximum crispiness.
