- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups cooked salmon, flaked
- 1 cup corn (fresh or frozen)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the heavy cream, flaked salmon, and corn. Cook for an additional 5-10 minutes until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
Use fresh salmon for best flavor; canned salmon can also work. You can add other vegetables like carrots or spinach for added nutrition. Adjust cream for desired thickness.
