Ingredients

- 500g salmon fillets, skinless and boneless
- 4 medium potatoes, diced
- 1 large onion, chopped
- 2 carrots, sliced
- 1 liter fish or vegetable stock
- 300ml cream
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large pot, heat a little oil and sauté the onions for about 3 minutes until soft.
- Add the diced potatoes and carrots, then pour in the stock and bring to a boil.
- Reduce heat and simmer for about 10-15 minutes, or until the vegetables are tender.
- Cut the salmon into bite-sized pieces and add to the soup.
- Stir in the cream and cook for another 5 minutes.
- Season with salt, pepper, and dill.
- Serve hot with lemon wedges.

This soup can be stored in an airtight container in the refrigerator for up to 2 days or frozen for up to a month.
