Description

A comforting and nutritious salmon soup packed with healthy ingredients, perfect for any season.


Ingredients

Scale
  • 500g salmon fillets, skinless and boneless
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 1 liter fish or vegetable stock
  • 300ml cream
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a large pot, heat a little oil and sauté the onions for about 3 minutes until soft.
  2. Add the diced potatoes and carrots, then pour in the stock and bring to a boil.
  3. Reduce heat and simmer for about 10-15 minutes, or until the vegetables are tender.
  4. Cut the salmon into bite-sized pieces and add to the soup.
  5. Stir in the cream and cook for another 5 minutes.
  6. Season with salt, pepper, and dill.
  7. Serve hot with lemon wedges.
