Ingredients

- 4 large Eggs
- 1/2 cup Sun-dried tomatoes, chopped
- 1 cup Spinach, chopped
- 1 cup Almond flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/2 cup Cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Beat the eggs in a mixing bowl and add chopped sun-dried tomatoes and spinach.
- Combine almond flour, baking powder, salt, and pepper in another bowl.
- Mix the dry ingredients into the egg mixture until well combined. Add cheese if desired.
- Spoon the mixture into a greased muffin tin.
- Bake for 15-20 minutes or until golden and set.
- Let cool slightly before serving.
Notes
For a variation, add cooked bacon or ham, swap spinach for kale or bell pepper, or make mini muffins for appetizers.
