These Savory Whole30 Egg Bites are small, soft egg cups that are quick to make and perfect for breakfast or snacks.
Ingredients

- 6 large eggs
- 1/2 cup bell peppers, diced
- 1/4 cup onion, diced
- 1/2 cup spinach, chopped
- 1/2 cup cooked sausage or ham (optional)
- Salt and pepper to taste
- 1/4 cup almond milk (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs and almond milk (if using) in a mixing bowl.
- Add diced bell peppers, onion, spinach, and cooked sausage or ham (if using) to the egg mixture.
- Season with salt and pepper to taste.
- Grease a muffin tin or use silicone muffin cups.
- Pour the egg mixture evenly into the muffin cups.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin. Enjoy warm or store for an on-the-go breakfast!
Notes
Chop vegetables small for even cooking. Do not overfill muffin cups; leave room for the eggs to expand. Use silicone muffin cups for easier removal.
