- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup frozen corn
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups sliced potatoes (about 1.5 lbs)
- 1 cup shredded cheese (cheddar or your preference)
Instructions
- Gather all ingredients and prepare your workspace.
- Chop the onion and mince the garlic to ensure they cook evenly.
- Rinse and drain the canned kidney beans to reduce salt and enhance flavor.
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat before using it.
- In your slow cooker, layer the ingredients starting with the sliced potatoes.
- Next, add the cooked ground beef, chopped onions, minced garlic, drained beans, corn, and diced tomatoes.
- In a separate bowl, mix the condensed cream of mushroom soup, milk, chili powder, salt, and black pepper.
- Pour this mixture evenly over the layers in the slow cooker.
- Cover and cook on low for 6-8 hours, allowing all flavors to meld together.
- About 15 minutes before serving, sprinkle the shredded cheese on top. Cover again until the cheese is melted.
- Scoop onto plates and serve with your favorite toppings.
Notes
For added flavor, consider using ground turkey or chicken instead of beef. You can also incorporate other vegetables like bell peppers, carrots, or zucchini.
