- 4 tablespoons unsalted butter, softened
- ⅓ cup packed brown sugar
- 1½ tablespoons all-purpose flour
- 2½ teaspoons ground cinnamon
- Pinch of salt
- 1 cup unsalted butter, softened but cool
- 1⅓ cups granulated sugar
- 1¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- In a small bowl, mix together 4 tablespoons of softened unsalted butter, ⅓ cup packed brown sugar, 1½ tablespoons all-purpose flour, 2½ teaspoons ground cinnamon, and a pinch of salt. Set aside.
- In a large bowl, beat together 1 cup of softened but cool unsalted butter and 1⅓ cups granulated sugar until creamy.
- Add in 1¾ teaspoons pure vanilla extract, 1 large egg, and 1 large egg yolk. Mix until well combined.
- In another bowl, whisk together 2¾ cups all-purpose flour, ¾ teaspoon baking powder, 1 teaspoon cornstarch, and ¼ teaspoon salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Take the cinnamon-sugar mixture set aside earlier and gently swirl it into the cookie dough.
- Chill the cookie dough in the refrigerator for about 30 minutes.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers may look soft but will firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
Notes
Best enjoyed warm or at room temperature. Dust with powdered sugar for presentation.
