Description

Delightful cookies that combine the flavors of cinnamon rolls with the texture of sugar cookies, perfect for any occasion.


Ingredients

  • 4 tablespoons unsalted butter, softened
  • ⅓ cup packed brown sugar
  • 1½ tablespoons all-purpose flour
  • 2½ teaspoons ground cinnamon
  • Pinch of salt
  • 1 cup unsalted butter, softened but cool
  • 1⅓ cups granulated sugar
  • 1¾ teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2¾ cups all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt

Instructions

  1. In a small bowl, mix together 4 tablespoons of softened unsalted butter, ⅓ cup packed brown sugar, 1½ tablespoons all-purpose flour, 2½ teaspoons ground cinnamon, and a pinch of salt. Set aside.
  2. In a large bowl, beat together 1 cup of softened but cool unsalted butter and 1⅓ cups granulated sugar until creamy.
  3. Add in 1¾ teaspoons pure vanilla extract, 1 large egg, and 1 large egg yolk. Mix until well combined.
  4. In another bowl, whisk together 2¾ cups all-purpose flour, ¾ teaspoon baking powder, 1 teaspoon cornstarch, and ¼ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Take the cinnamon-sugar mixture set aside earlier and gently swirl it into the cookie dough.
  7. Chill the cookie dough in the refrigerator for about 30 minutes.
  8. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, leaving space between each cookie.
  10. Bake for 10-12 minutes or until the edges are lightly golden. The centers may look soft but will firm up as they cool.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Best enjoyed warm or at room temperature. Dust with powdered sugar for presentation.
